Secondly, let’s get you familiar with your starter. Here are some next steps after you take yours home!
How exciting that you just received a starter. I understand it may come with a lot of questions, so I am here to help! Let’s start by talking about when and what you feed your starter. Feedings will always be with some form of unbleached flour and preferably filtered, room temperature water. I personally use organic all purpose or bread flour.
Next, let’s talk about how to feed your starter.
More than likely you were only given a little starter to start with, so first consider transporting to a bigger container and feed 50 g of flour to 50 g of water without discarding to create a bigger starter and stir it all together. 50 g is about 1/3 of a cup if you prefer measuring cups vs a food scale. (Side note: If you ever want more starter to work with, feed without discarding any starter first.)
After that, you can put it in the fridge and feedings will continuously be 1:1:1 ratio of water, flour, starter after half is discarded or used. If these addings seem off, go for the consistency in the photo displayed. An easy way to stay at 1:1:1 is to measure the weight of your jar so that you know how much starter is in your jar at all times.
Finally.. let’s talk about the timing of feedings.
If left on the counter: Feed your starter every 24 hours.
If left in the fridge: Feed your starter every 5-7 days. And to be honest, I have left mine in the fridge for weeks at a time, and this resilient little thing will come back to life with just a few feedings on the counter.
If you bake with it: Just make sure to feed back what you used, and this is considered a “feeding.” The feeding is best 1:1:1, so however many grams of starter you have left will be how much flour and water you feed it. NEVER use all of your starter to bake or otherwise you will be out of starter. Most recipes use 100-150 grams or 1 cup to a cup and a half of starter per recipe.
How I keep it simple: I stopped precisely measuring after awhile and just aimed for consistency. I use a small scoop of flour and a splash of water to create a pancake mix like consistency, and it is good to go! Rule of thumb.. if it is a little runny, add a little more flour. If it is too doughy, add a little more water! Most importantly, don’t overthink, and keep it simple and sustainable.
MOST IMPORTANT STEP: Name your starter :)
